Quadrati are a type of ravioli: a style of pasta made from placing a filling between two thin sheets of pasta dough before cutting out each piece. For this quadrati, we’ll be making a filling with ricotta cheese and spinach. In this class, you’ll make your own pasta dough from scratch.
