With a rich career spanning over two decades, Chef Dalling has a reputation for blending bold creativity with refined technique, drawing inspiration from Santa Clara Valley’s abundant agricultural heritage. His menus are crafted to celebrate the vibrant, fresh flavors of the region, combining local ingredients with global culinary influences.

Complementing this expertise is Executive Pastry Chef Fernando Arreola, who also brings two decades of experience to the culinary team. He has spent the last five years perfecting desserts at the Convention Center. Known for creations like pistachio opera cake, seasonal fruit tarts, and decadent chocolate soufflés, Chef Arreola’s desserts elevate every event with creativity and impeccable craftsmanship.

Beyond exceptional dining, Levy Restaurants operates The Teaching Kitchen, a community-focused program at the Santa Clara Convention Center funded by the City of Santa Clara. This free, six-week course provides adults with a passion for hospitality the tools and training to launch careers in the culinary industry. Participants learn essential skills, including food preparation, service techniques, and resume building, while gaining inspiration from hospitality professionals. The program not only empowers future industry leaders but also reinforces Levy’s commitment to giving back to the community.
